Grapefruit and Sage Champagne Cocktails
1 cup sugar
1 cup water
2 bunches of sage leaves
For the Cocktail:
100ml grapefruit juice
45ml simple syrup
A dash of bitters
125ml of Lautus Sparkling
Make the simple syrup. Combine the sugar and water over medium heat, stirring occasionally until the mixture starts to simmer and the sugar is completely dissolved. Stir in the sage and cook for 30 seconds more. Remove sauce pan from heat and set aside to cool.
Make the cocktails. For a single cocktail, vigorously shake 100ml of grapefruit juice, 45ml simple syrup and dash of bitters in a shaker with ice. Strain into a glass with fresh ice. Top with 125ml Lautus Sparkling.
375ml Lautus Sparkling
375ml Crodino non-alcoholic citrus bitters
350ml ginger ale
Citrus slices and basil leaves for garnish
In a large pitcher, mix together the Crodino, Lautus Sparkling and ginger ale. Cut the citrus slices really thin and place them up against the inside of the glass, then fill with ice. Pour cocktail over the ice and garnish with basil leaves.
